I've found that removing the whole breast and then slicing the turkey ..horizontally..?..is actually kind of nice. Making slices with your knife perpendicular to the breast bone if you will imagine the breast back on the bird. I find that the pieces are so much easier to cut (while eating on the plate with fork/knife) and easier to chew. Plus, you get a meatier chunk vs. a big thin slice which takes up too much space. Of course, everyone has their own method.
