Making slices with your knife perpendicular to the breast bone if you will imagine the breast back on the bird.  I find that the pieces are so much easier to cut (while eating on the plate with fork/knife) and easier to chew. Plus, you get a meatier chunk vs. a big thin slice which takes up too much space.
